According to The Spruce Eat's Site, eggnog dates back as early as the 13th century in Europe.

Medieval monks in Britain were known to drink posset, a warm ale punch made with eggs and figs.

Over the years, it's taken on many iterations and merged with various milk and alcohol options, usually served at holiday events or parties.

By the 17th century, it was primarily consumed by the well-to-do because milk, eggs, and sherry (alcohol used at that time) were scarce commodities.

Today, most eggnog is made with eggs, milk, sugar, vanilla, and nutmeg. The sugar and milk make the delicious drink high in carbs and that is why we need this Keto friendly eggnog recipe!

Where Does The Word Eggnog Come From?

Some say the word “nog” comes from the word “noggin”, that meas wooden cup or “grog” which is a strong beer. The word “Eggnog” was set by the late 18th century.

Most store bought brands or recipes no, but this Keto sugar free eggnog made with almond milk is a big YES!

How Many Carbs Are In Eggnog?

Traditional eggnog recipes have anywhere from 15-30 carbs per serving and an average of 20 grams of sugar!

That is just way too much for a small glass of eggnog. This sugar free eggnog only has 2 net carbs thanks to the almond milk, heavy cream and natural sweeteners in place of traditional ingredients.

The store bought version of Eggnog is not only full of carbs, most of it contains high fructose corn syrup (HFC).

HFC is the first thing I suggest my clients stop eating because it's so bad for autoimmune conditions. It's basically cheap genetically modified corn heated up to high temperatures until it becomes a chemical.

Your body doesn't recognize this chemical as food and has trouble digesting it. This results in inflammation, which is the root of many diseases including autoimmune issues.

Many of them also contain these ingredients, none of which sound healthy or tasty.

  • Mono and Diglycerides
  • Disodium
  • Phosphate

Is Homemade Eggnog Dangerous?

This question is googled a lot, but as long as the eggs are cooked like in this recipe, it should be safe. Make sure it reaches a temperature of 165 degrees on a candy thermometer.

I wouldn't advise eating raw eggs now days due to the possible dangers.

Which Sweetener is Best for Keto / Low Carb Eggnog?

The best sweetener for any Keto treat is always the natural sweeteners such as monk fruit or stevia. The next best are sugar alcohols, erythritol and xylitol.

Aspartame, Splenda and other artificial sweeteners are not natural and you should avoid these chemicals.

Consuming aspartame in my 30's resulted in several autoimmune issues and brain fog, so I suggest clients stop it immediately.

In this recipe, this powdered erythritol is best because it doesn't leave the eggnog grainy. It's a little hard to find in stores, so I left you a link below to Amazon.

Keto Eggnog

Ingredients

  • 3 Large Eggs Beaten
  • 1/3 Cup Monk Fruit or Erythritol
  • 2 Cups Unsweetened Vanilla (or plain) Almond Milk
  • 1/4 tsp Salt
  • 1 Dash Nutmeg
  • 2 tsp. Vanilla
  • 1 Dash Cinnamon

As Serving

  • 3/4 Cup Heavy Cream
  • 3 Tbsp. Powdered Erythritol
  • 2 oz. Rum (optional)
  • 1 Dash Cinnamon (optional)

Instructions

  • Combine beaten eggs, sweetener, and salt in medium sauce pan.

  • Slowly whisk in milk until combined.

  • Cook over medium heat until it becomes thick (stirring constantly)

  • Let it reach 165F on a candy thermometer

  • Remove from heat.

  • Stir in vanilla and nutmeg

  • Let cool.

  • Pour into glass jug or pitcher and place in fridge for 6-8 hours.

Before Serving

  • Use electric mixer to whip heavy cream combined with powdered sweetener until soft peaks form.

  • Gently fold this mixture into eggnog mixture.

  • Add in rum and/or cinnamon.

  • I added a little extra liquid monk fruit because I love the sweet taste.

  • Top with more whipping cream if desired.

  • Sprinkle on nutmeg.

  • ENJOY!
