Ingredients

  • 3 oz. (6 tbsp) 85 g (90 ml) unsalted butter
  • ½ cup (1½ oz.) 120 ml (45 g) unsweetened finely shredded coconut
  • 1 tsp 1 tsp ground cardamom (green)
  • 1 tsp 1 tsp ground cinnamon
  • ½ tsp ½ tsp vanilla extract

Making low carb simple

Instructions

Instructions are for 10 servings. Please modify as needed.

  1. Bring the butter to room temperature.

  2. Carefully toast the shredded coconut in a dry pan over medium high heat, until lightly browned. This will enhance the coconut flavor, but you can skip this if you want. Let cool.

  3. Combine butter, half of the shredded coconut, and spices in a bowl. Chill mixture in refrigerator for 5-10 minutes, until slightly firm.

  4. Form into walnut sized (roughly 1" or 2.5 cm) balls. Then roll the balls in the remaining shredded coconut.

  5. Store in refrigerator or freezer.

    Love them. I made them with coconut butter. The rest was exactly as the recipe. They are delicious and satisfying. 10 servings. Thank you!

    I made them following the recipe except used Kerrygold salted butter instead of unsalted butter. That’s what I had available. I think the salt enhanced the other flavors. I like it. Haven’t tried the combo of butter and cream cheese, but that sounds good.

    Love these! I did add 1/2 tsp of swerve, used salted buttet, and added Penzeys Cake spice instead of the cinnamon and cardamom (working with what I had). It only made 8 balls for me, but maybe my idea of a walnut is bigger than intended.

    These delicious fat bombs are perfect for me! The real delicious taste of Keto eating: you'll succeed so much more easily if you can learn to give up the taste of sugar....I see a lot of people are adding different kinds of fake sugar to them. The naturally slightly sweet tate of vanilla, cardamom and cinnamon are what make me prefer them to the many artificially sweetened fat bombs out there.

    Hi - I will definitely try this, but am wondering why cacao-butter isn't mentioned ANYWHERE on the DD sites so far!? Guess these fat bombs would be even tastier when a small amount of cacaobutter (for texture and taste) will be added...

    Made these at my mother's request as she wanted a savory fat bomb. I didn't like them. Too rich with the butter. I don't want to throw them away, do you think I could use them as an ingredient in another recipe? Or maybe to make a chai tea drink? Looking for suggestions.

    I would really appreciate a standard objective measurement of the size of ball (i.e. 1" diameter). Black walnuts are the size of tennis balls and I have a feeling this is not the appropriate sizing but have no objective data point to compare to...
